Adzuki Beans with Mango Pineapple Salsa and Crispy Onions




This was seriously fantastic!
I purchased my beans from Dixie Nutrition (bulk bins). Rinse 2 cups of beans, place beans in a crockpot, cover the beans with about 1" of water, add a couple tablespoons of "Better than Boulion" (vegetable flavor), and cook for about 5 or 6 hours or until tender. When you are ready to serve beans, just top with a desired amount of mango pineapple salsa
(I used Walmart brand), and crispy onions. Enjoy!
Now you owe me one too "Reign of Terror"!

Anita. I'm supposed to give you a recipe? You're the healthy one! I did buy a new pot I'm hoping to try out. Bread recipe. It'll come one of these days. ( we had so much fun the other night.)

I've decided to come out of my cave and cease to be Loser Mom--so I bought all the ingredients for your delicious looking meal! I can't wait to make it. I am also going to add California rolls to the menu since Dan loves them. Keep posting! I love your ideas! Umm. . . where do you buy seaweed and other fishy sushi ingredients?

Dorothy, I got my wraps at Dixie Nutrition. I don't know if most grocery stores have them, but try a health food store or Asian market. Good Luck!
